Super Masala Vegan Tofu Scramble
Why make vegan tofu scramble? The naturally gluten-free and low in calories ingredient - tofu, is made by coagulating soymilk to create curds. It contains no cholesterol and is an excellent source of iron and calcium. The curds are then pressed and compacted into the gelatinous white blocks recognised as tofu. This soy-based protein can be used in your breakfast meal or in your dinner.
Here is a simply delicious tofu scramble vegan recipe featuring our Super Masala Mix. This tofu scramble recipe packed with fresh veggies and is high in protein. It's the perfect day starter meal:
Super Masala Mix Tofu Scramble:
Ingredients:
For the scramble:
- 1 onion
- 1 tomato
- 200g tofu
- 2 cloves garlic
- 2 tsp lime
- 1 tsp Super Masala Mix
- Salt to taste
- Coriander (cilantro) for garnishing
For the sides:
- 2 cups kale
- 1 tsp lime
- Salt to taste
- pepper
Instructions:
- Heat the pan. Add the sliced onion and stir till medium brown (no oil required).
- Add the sliced cloves of garlic. Now add the chopped tomato and stir.
- Crumble the tofu and add it to the pan. Stir well.
- Now add the lime juice evenly and stir.
- Add the Super Masala Mix powder and stir well. Garnish with coriander.
- For the sides: Heat the kale on a pan. Add the lime juice. Sprinkle some salt and pepper for taste - you even add more of the Super Masala Mix as well.
Serve with hot toast or have it on its own for a fabulous vegan breakfast or brunch. Enjoy!
