SPROUTED MOONG BURGERS
Ingredients:
1 cup moon beans – soaked & sprouted over 2 nights (or boiled)
1 onion thinly chopped
4 cloves garlic chopped
2 whole tomatoes chopped
1 fresh green chili chopped
Handful coriander leaves chopped
Spices:
1 tablespoon salt
2 teaspoons cumin powder
2 teaspoons coriander powder
1 teaspoons turmeric powder
Additional Items:
Burger buns
Ketchup
Mustard
Directions:
Step 1: heat 1 tablespoon oil on a pan. Fry onions for 1 min. Add spices, garlic, and chili. Then add tomatoes and sauté for 3 minutes. Allow it to cool.
Step 2: combine the moong beans and tomato onion mix in a food processor. Make patties.
Step 3: Heat some oil on a pan and grill patties for 3-4 minutes.
Step 4: Toast or heat your burgers. Then make your burgers.
Step 5: Feel free to add in lettuce, mustard, ketchup and green chutney.

VEGGIE PASTA
Ingredients:
1 can tomatoes (or 6 large ripe tomatoes) 2 small or 1 big onion chopped
5 cloves garlic
1 bay leaf Handful fresh basil (use 2 teaspoons of dried powder if not fresh)
Handful fresh parsley (use 2 teaspoons of dried powder if not fresh)
2 tsp oregano
2 tablespoon black pepper
1 tablespoon paprika
1 tablespoon salt
2 tablespoon extra virgin olive oil
Chopped/diced veggies (zucchini, broccoli, carrots, bell peppers)
Choice of pasta
Choice of red or white wine
Directions:
Step 1: Ripe tomatoes if using fresh
Step 2: Skip step 1 for canned tomatoes
Step 3: 1 tablespoon olive oil, sauté onions, garlic, add bay leaf and stir for 2 minutes
Step 4: Add in tomatoes with black pepper, paprika, salt. Sautee on medium heat for 5 minutes
Step 5: Add in basil, parsley, oregano and your choice of veggies. Mix and stir for 2 minutes.
Step 6: Add a dash of wine (¼ cup). Cover & simmer for 5 minutes on low heat. Done!
For pasta:
Step 7: In a large pan, fill water ¾ of the way. Add a teaspoon of salt. Bring to boil white covered. Add your choice of past and let it cook for 7 minutes (longer if you like it soft)
Step 8: Drain pasta into a big serving bowl and add the remaining oil.
Step 9: Pour the past sauce & enjoy!
